Ingredients

Whole pork butt

Pork BBQ Rub
2 cups salt
2 cups sugar
1/4 cup nutmeg

Directions

Mix pork rub ingredients in a medium bowl.

To season the pork butt, coat the entire roast with rub. Lift and shake to allow excess seasoning to fall off. What is left on the meat is the correct amount for seasoning.

Smoke 3-4 hours in smoker at 200–250 degrees (until a dark mahogany finish is reached.)

Cover with aluminum foil and finish in a 275-degree oven until tender. When determining the approximate amount of time in the oven, start with 1 hour for each inch of pork thickness.

When the meat is cool enough to handle, pull apart by hand.
