Irish Stout Pancake Recipe

Ingredients
1/2 cup stout
1/2 cup milk
2 eggs
1 teaspoon vanilla extract
2 tablespoon oil
1 cup all purpose flour
1 teaspoon baking soda
pinch of salt
cooking spray (for griddle)
cooked bacon for garnish (optional)
Instructions
1. Lightly beat eggs in a large mixing bowl. Slowly mix in the stout, milk, vanilla and oil.
2. In a separate bowl, sift the flour, salt and baking soda. Carefully combine flour and liquid mixtures, and mix until batter is fairly smooth. Don't over mix.
3. Heat a griddle on medium heat. Coat griddle with cooking spray, and pour pancake mixture. Cook until both sides are golden brown.
4. Garnish with two generous strips of thick-cut bacon. Drizzle with maple syrup.
